Tip of the Week!
If you’re ever stuck unprepared with cold butter when your recipe calls for softened, don’t panic! Put the cold butter, stick by stick, between two sheets of wax/parchment paper and roll out with a heavy rolling pin until 1/4”-1/8” thick. Peel off wax paper before it… starts to stick. Voila! Softened butter in a pinch!

Food and Friends and Love
This weekend marked the kickoff of the 2nd annual Phil LeBlanc Memorial Tennis Tournament. It was a smoking hot day but it didn’t stop friends, family, acquaintances and volunteers from coming out to show their love for Phil and their support for a great cause!

A menu? What a novel concept!
I’ve finally put together a subpar attempt at an up to date menu. Unfortunately, my skill set lays in the kitchen and the kitchen alone. I’m a lost puppy once I leave the comfort of my knives and cast iron.

Vegan Goodies
Pineapple/Coconut Banana Bread
This recipe came from Joy the Baker and though I made a few tweaks [mostly for my own tastes] it was damned near close to perfect. Dense and moist with so much flavour.
